Why?
Isn't originality of the utmost importance (for the most part) here? Isn't adding options after the fact frowned upon? |

Is an option that was never available from the factory any less "original" if I install it in 2017 than if the original owner installed it in 1968?

Yes. What was on the car the day the dealer handed over the keys to the original buyer - that car and all it's options (including factory and dealer installed) is what defines "original" . . . IMO.
