1) Being backed by a resto company or TV show does not qualify anyone as a go-to expert. In the end, it's a lot about PR and scratching each others' backs.

2) I realize you weren't necessarily implying this, but it's sites like this that have the most knowledge. And as far as the sites I visit, this is among the most consistent with accurate knowlege.
