I was going to bring up this same accident as an argument against the video.
A B757 is not really alot bigger than a B737 height wise (it may even be 20' from the bottom of the fuselage to the top), it is longer with alittle more wing. As for the question of blowing over vehicles on the road...that only happens in the movies. Next time you are at an airport look around, there are vehicles all over the place, sometimes during resurfacing the runways you will land right over them. Also, during landing is when the plane is all dirtied up with flaps, spoilers and landing gear is when you get the most wake turbulence which is what would flip things over but yet it does not at the airport. At 500mph you get vortices off the wings if you are directly behind them and for another aircraft this is bad because it changes the relative wind which screws with the lift that acts on the following aircraft, it would be sorta like trying to steer a boat along the edge of a waterfall. I am not an expert but I think that video is at best entertaining but still B.S.
