The "P truck" refers to just the chassis, as provided by GM from Janesville Wisconsin or Pontiac Michigan.
The chassis (basically the bare frame rails, driveline, steering column/wheel and a temporary seat) is then sent to an upfitter and they put whatever kind of body you want (anything you can imagine), like the more familiar Grumman bread truck body. K

As a kid, we would visit my Grandparents in Pontiac. My brother and I always got a kick out of seeing the stacked truck chassis being driven on the streets in that configuration.
