Simply call your carrier/agent and let them know the value you are looking to insure for. Normally, the first thing they do is check their database to see if they have any of that vehicle at that value requested. Even if you have an appraisal, they still may not go as high as you want them to. I have a client that has a very rare 67 L79 Nova (1 of 6) restored with ONLY NOS parts over a very long period of time, wanted a value of $160k on the car. Every carrier turned him down even with the mountain of paperwork, appraisals etc. I was able to get it done simply due to the fact that I do a lot of business with one particular company and they agreed to take it @ 160k because of the relationship and past history. This is where your agent helps you immensely.
